  1. Fry the chips till crisp.drain out on paper towel or collander and set aside for later step.
  2. Chop and fry onions in 3 tblspn oil.til golden brown..
  3. Add the tomatoes...stir and break down with fork abit...simmer about 2- 3 mins.
  4. Add all the spices.
  5. Add the fried chips..at this point can add the slice of cheese stir it in til melted...or can ommit if dnt prefer the cheese.

For qwik salad (see pic at top)wash and slice your cucumber and peppers.sweetcorn... and any other adition.you can zfd of your choice salad leaves pomgranate.rocket leaves. pickled veg can chop finly and add eg beetroot or gerkin or olive..some herbs too or bit of zest and olive oil drizzle corriander etc..make a nice colorful. salad of these and use as side dish with meal...bismillah enjoy.

Fish Salad instructions

  1. Cut the fish into large pieces, place fish in a roasting dish greased with olive oil. Dribble more olive oil over the fish. put in a preheated oven for 20 minutes on 175°C or gas 6.
  2. While fish is cooking, make your crispy salad. Cut up lettuce into bite size pieces and add to a large bowl..
  3. Then cut up the red onions into small pieces and add to bowl.
  4. Cut tomatoes into wedge pieces and add to bowl.
  5. Cut up cucumber slices thick and then into small pieces and add to bowl.
  6. Add the handful of corn into the bowl.
  7. Cut up sweet peppers and add to the salad bowl.
  8. Toss the salad add salt & pepper, 1 tablespoon of lemon juice and toss.
  9. Then add the sour cream and toss gently again.
  10. Add 1 tbsp of oyster cauce and mix in..
  11. Now the fish should be cooked. Add to the salad and toss once more, then add the dried onions all over the top.
  12. Serve on a bed of crispy lettuce.
  13. Add the mixture on top of the lettuce.
  14. Then garnish grated cheese.
  15. Drizzle with virgin oil.

  4. In the same pan, roast the peanuts. I absolutely love the much needed crunch it adds to the salad. Such a better alternate than the bread crutons..
  5. Now mix everything in the pan, and give it a good mix..
  6. Move the mixture in a bowl, add salad leaves. I added bistro salad pack..
  7. Dive in!.
