You can use russet, just be sure to cook them al dente. Celery - It's cool, crunchy and a classic potato salad ingredient, but can be omitted if you're not a fan.

  11. Prepare 2 tsp of extra virgin olive oil.
  12. Prepare of Zest of 1 lemon (unwaxed).
  13. It's of Juice of 1 lemon.
  14. Prepare 1 tsp of runny honey (or maple syrup if vegan).
  15. It's 2-3 cloves of garlic, peeled and crushed.
  16. You need pinch of salt.
  17. You need Pinch of black pepper.

This no-mayo pasta salad is deliciously creamy and packed full of fresh veggies. And being vegan doesn't mean you can't enjoy the classic summer foods that you've always known. This Vegan Potato Salad is sure to have all of your non-vegan friends asking "THIS is vegan???"
